Ingredients
1/2 cup nutiva shortening
3/4 cup coconut sugar
1 tsp vanilla extract
1 Tbsp. molasses
1 egg (or substitute with flax seed+water or 1/4 Cup Applesauce)
2 1/2 tsp ginger
1 tsp cinnamon
1/2 tsp salt
2 tsp baking soda
1 cup super fine almond flour
1 cup almond flour
1 cup tapioca flour
Directions
Mix ingredients together and place into refrigerator for one hour
Roll into balls and flatten out like a pancake
Place onto a cookie sheet and bake for 8-10 minutes on 350 degrees
