Filipino Salad with Citrus Patis Dressing

Enjoy this healthy and tasty salad from Chef Angel!

Ingredients

2 cups Spring Mix

2 cups Green leaf lettuce

1 cup Bamboo shoots strips, drained and rinsed and soaked in honey lemon water overnight. (You can use sugar or other syrup sweeteners instead of honey.)

1 medium red bell pepper, cut into strips

1 medium jicama, cut into strips

FOR THE DRESSING:

3 Tablespoons Calamansi (Philippine lemon) juice

Juice of 2 lemons

Jucie of 1 orange

Lemon skin of 1 lemon, cut into very thin strips

Orange skin of 1 orange, cut into very thin strips

3 Tablespoons Patis (fish sauce)

3 Tablespoons honey

Directions

In a separate bowl, mix your salad greens together and in another bowl mix the jicama, red bell pepper, and bamboo shoots. Set aside.

Make your dressing by placing all of the ingredients in a jar with a lid.

Cover and shake until well-mixed.

Toss your salads separately with light dressing and plate your salad, starting with the green salad mix and top with the rest of the jicama, pepper, and bamboo shoots mix.

You can also opt not to toss the greens in the dressing
