Lettuce Wraps

INGREDIENTS

  • 1 T sesame oil
  • 2 T peanut oil
  • 1 T garlic chopped
  • 1 T ginger chopped
  • 1 lb Ground chicken
  • 1 Can chopped water chestnuts (I buy sliced, drain and chop up)
  • 3 T Honey
  • 2 T Rice vinegar
  • 3 T Mirin

INSTRUCTIONS

  1. Heat oil and sauté garlic and ginger. Add ground chicken and cook.
  2. Drain off grease and add water chestnuts and the following mixture
  3. Mix together
  4. ¼ c. GLUTEN-FREE soy sauce
  5. Pour over the chicken mixture, I usually will reserve 1 TB of the grease with a teaspoon of corn starch and add it back to thicken
  6. Serve with bibb or hydroponic lettuce, shredded carrots, and Siracha and jasmine rice
  7. For extra, I will sometimes fry white rice noodles in vegetable oil and sprinkle for crunch
