Keto Sugar Cookies

 

 

What you will need:

 

  • 1/3 Cup Softened butter (use coconut oil for dairy free)
  • 2 Large Eggs
  • ½ Tsp. Vanilla extract
  • 1/3 Cup Allulose
  • ½ Tsp. Gluten Free Baking Powder
  • ¼ Tsp. Sea Salt
  • ½ Cup Coconut Flour
  • ¼ Tsp. Xanthan Gum (Optional for less crumbly cookies)
  • Baking Sheet
  • Parchment Paper
  • Large Bowl
  • Hand mixer
  • Optional- Rolling Pin and Cookie Cutters

 

Instructions:

 

  • Preheat oven to 350 degrees
  • Line baking sheet with parchment paper
  • In large bowl mix together the butter and sweetener until fluffy with hand mixer
  • Add in eggs, vanilla, baking powder, and sea salt
  • Gradually mix in the coconut flour
  • Sprinkle xanthan gum over the cookie dough and mix in
  • Let the dough sit for a few minutes to thicken

 

 

Next you have two options for either round cookies or using cookie cutters.

 

Option 1: Round Cookies

 

  • Use a small cookie scoop to place dough on baking sheet
  • Flatten dough with your palm to about ¼ inch thick
  • Keep cookies about a 1 inch apart
  • Bake for 7-8 minutes until they start to firm but are still soft.Remove from the oven and allow to cool before moving.

 

Option 2: Using Cookie Cutters

 

  • Form dough into a ball and chill in the refrigerator for 1 hour
  • Once firm remove from the refrigerator and place it between two pieces of parchment paper
  • Roll out dough to ¼ inch thickness and remove top layer of parchment paper
  • Cut into shapes using cookie cutters and remove excess dough
  • Place parchment paper on cookie sheet with cut outs on it
  • Repeat the steps for the excess dough.
  • Bake for 7 to 8 Minutes until they start to firm up but are still soft. Remove from the oven and allow to cool before moving.
