- 1/2 cup nutiva shortening
- 3/4 cup coconut sugar
- 1 tsp vanilla extract
- 1 Tbsp. molasses
- 1 egg (or substitute with flax seed+water or 1/4 Cup Applesauce)
- 2 1/2 tsp ginger
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 tsp baking soda
- 1 cup super fine almond flour
- 1 cup almond flour
- 1 cup tapioca flour
- Mix ingredients together and place into refrigerator for one hour
- Roll into balls and flatten out like a pancake
- Place onto a cookie sheet and bake for 8-10 minutes on 350 degrees
